Quick and Easy Healthy Breakfast | Banana Pancake

Hello my lovelies!
I've got a really simple and easy breakfast recipe for you. You know that feeling when you wake up and you're not really awake and you just open the fridge hoping that there's something there ready that you can eat? Or is that just me? Well I've been making banana pancakes for the past week or so for breakfast and it just saves me so much time. I don't have to think for ages what to make or use lots of different products but still manage to keep it fun and more exciting than a slice of toast.
All you need is:

  • A banana
  • 1 egg
  • A little flour

  • Start off by peeling the banana and just break it up into a bowl. Mush the banana with a fork until it's quite liquidy but still has some chunks in it.

  • Break the egg into the bowl and stir until the consistency is runny.
  • Add a little flour, I think this step just depends on what you like. I don't normally measure this out but it's probably like a flat tablespoon.

  • Pour the mixture into a warm pan with a dab of oil. TOP TIP make smaller pancakes to make it easier for you to flip. The bigger it is the harder it is for you to fit a spatula under and flip without it breaking. Keep checking the pancake by lifting by the side and seeing the colour of the pancake. Once both sides are done, you can enjoy the pancake.
So that's it, easy right? I t normally takes like 10 minutes max to do. You can eat the pancake with some lemon juice on it with  Nutella. I recently got this Mocha spread from Lidl which tastes amazing with the pancake. Or just pour some honey over it. Mmmmm, yummy.

Thanks for reading, Dom x
